Korean Filled Pancake|Ingredient preparation



■ Cake crust (8 servings):
  • All-purpose flour 180g
  • Glutinous rice flour 90g
  • Brown sugar 20g
  • Salt 5g
  • Yeast 5g
  • water 200ml

■  Stuffing:
  • Brown sugar 60g
  • 20g cinnamon powder (if you are afraid of cinnamon smell, you can replace it with peanut powder)
  • 30g crushed nuts

01|Make pie crust

Put all-purpose flour, glutinous rice flour, yeast, and salt into the pot, then sift the brown sugar powder and mix well.



The sieving action can make the powder mix evenly, and the part of brown sugar granules can also be evenly mixed in the powder.


Sieve brown sugar, add water and mix well.

Reminder: Do not pour all the water into the pot at once, it will cause the dough to be too wet and sticky, which will affect the fermentation! At the beginning, pour three-quarters of the water, and then adjust the water according to the water absorption of the powder.



Knead until the dough is formed and becomes smooth and does not stick to hands.


Cover the dough with plastic wrap (or a lid), and leave it to ferment at room temperature for 1-2 hours, until the dough expands to double in size.


The dough is fermented.



02|Make filling

Crush mixed nuts, mix well with brown sugar powder and cinnamon powder and set aside.





03|Synthesis

Cut the fermented pie crust into eight equal pieces.


After flattening the dough into a round cake shape, put the filling in the center, then wrap it inside and flatten it into a round cake shape.




04|Frying pan heating

Heat cooking oil in a pan, turn on medium-low heat,
 fry the bottom for 2 minutes, turn over, and fry until the surface is golden brown.




After cooking, sprinkle with powdered sugar, chocolate sauce or ice cream and enjoy together!
